Xương vịt rửa sạch với 20ml rượu, 10gr muối, 10gr gừng đập giập sau đó trụng qua nước sôi rồi rửa lại để ráo. Cho xương vịt vào nồi cùng với 1,5 lít nước, 50gr hành tây và 30gr hành tím nấu sôi, vớt bọt, hạ nhỏ lửa, ninh cho cô đặc lại còn khoảng 700ml nước là được.
Gạo vo sạch. Nước dùng sau khi nấu sôi thì cho vào vừa xấp mặt gạo, tiếp tục nấu thành cơm. Tùy vào gạo dẻo hay nở mà canh lượng nước dùng cho vào gạo, sao cho cơm chín nở xốp là được. Lá é lặt bỏ cọng cho vào máy xay với 10 trái ớt xiêm xanh, 10gr muối, xay thật nhuyễn. Cơm nấu chín cho 1/2 muối é vào cơm trộn thật đều rồi hấp lại thêm 5 phút.
Măng khô đem ngâm nở qua đêm rồi xả sạch lại đem luộc qua nước sôi. Khi luộc được khoảng 30 phút thì trút bỏ nước đang luộc thay nước khác, rồi luộc tiếp thêm 30 phút nữa. Sau khi luộc chín, xả lại măng bằng nước lạnh, để nguội, bỏ phần già đi, xé nhỏ, vắt ráo.
Lấy 10gr gừng đập giập cho vào cùng 10ml rượu và 10gr muối cho ức vịt vào rượu gừng rửa cho hết tanh, rồi rửa lại nước lạnh để ráo nước, cắt lát dày 5mm. Cho vào tô, ướp với 5gr gừng cắt sợi, 5gr tỏi, 10gr hành tím băm nhỏ, 1gr tiêu, 2gr hạt nêm, 5gr đường, 2gr muối, trộn đều để thấm.
Bắc chảo lên bếp, chảo nóng cho 10ml dầu vào, cho 5gr tỏi, 10gr hành tím băm nhỏ, 5gr gừng cắt sợi vào xào cho thơm rồi cho măng đã xé nhỏ vào nêm 2gr hạt nêm, trộn đều. Tiếp tục cho nước dừa tươi vào nấu cho sôi lên, hạ nhỏ lửa cho măng thấm gia vị và rút hết nước. Khi măng vừa cạn nước cho thịt vịt vào xào đến khi thịt săn lại thì cho tiếp cánh hoa sen vào, đảo đều, tắt bếp. Xếp thịt và măng ra tô hoặc thố, rồi đem hấp cách thủy thêm 30 phút là chín.
Vịt chín dọn ăn cùng cơm muối é và chấm với 1/2 muối é còn lại. Vậy là hoàn thành!
