Tôm bóc vỏ, bỏ chỉ đen, giữ lại phần đuôi cho đẹp. Ớt chuông bỏ hạt, thái miếng 2x3cm. Xiên sen kẻ ớt chuông cùng tôm cho đầy que xiên. Trong chén nhỏ trộn, đều 30ml rượu, 30ml dầu ô liu, 1 muỗng cà phê bột cà ri, 1 muỗng cà phê ớt bột và 1 muỗng cà phê tiêu trộn đều. Ướp que xiên tôm và ớt với hỗn hợp nước ướp khoảng 5 phút.
Nướng trong lò ở 200 độ C trong khoảng 10 phút. Sau khi nướng xong nên bật bếp gas hơ thêm 1-2 phút nữa cho tôm/ớt xem xém cho thơm và đẹp mắt.
Dọn kèm chanh và mayonnaise. Mình trộn mayonnaise với chút nước chanh, rượu Rum và rau mùi thái vụn để “nháy” lại mùi rượu trong nước ướp tôm, rất hợp.
